Description

A quick, easy crepe batter that uses standard ingredients you already have on-hand.

Ingredients

  • 3 eggs
  • 1⁄4 t salt
  • 2 c unbleached flour
  • 2 c 2% milk
  • 1 c butter (melted) or safflower/canola oil

Instructions

Supplies: 
measuring spoons
wet & dry measuring cups
medium bowl
rubber spatula
hand whisk; hand-held blender or traditional blender
Method: 

In a medium bowl, combine eggs and salt.  

Gradually add flour and milk alternately, beating with whisk or hand-held blender, until smooth.  Beat in melted butter or oil.  If using traditional blender, combine ingredients in blender jar, blend about 1 minute.  Beat down sides.  Blend again – 15 - 30 seconds.

Refrigerate batter for at least 2 hours before using.  

Thin batter with 1 - 2 Tbsps. milk or water, as desired.
